Is Marriage Relevant

By Terence Ward Marriage in America is indeed a contract a contract that comes with more obligations than rights. Marriage in America is a civil right that is not now and has never been in the past dependent upon any one religion or even religion in general for its justification, existence, or perpetuation. Marriage exists because people desire it and the community, working through the government, helps ensure that married couples are able to do what they need to in order to survive. At no point is religion needed or even necessarily relevant. I wholeheartedly concur that marriage is a contract, and that it is a contract with the community. That doesn’t mean, though, that marriage isn’t first and foremost a sacred rite. The confusion lies in the fact that churches were the first institutions of community in most places. The rituals that developed necessarily encompassed the entirety of the needs of the community. The Romans were extremely secular, and their marriages generally paid only passing homage to their gods, as was their wont. The rights and responsibilities of marriage were established by the secular authorities. However, this departure was muddled by the Church more or less taking over Rome (although the question of who assimilated whom is probably worthy of its own discussion). We have reached a point in the maturity of our society when we do not need the auspices of a single (or even multiple) religious institutions in order to attend to the needs of our populace. Like it or not, people don’t need a belief in a higher power to ensure safe food preparation, prevent homicide, or rear children. Plenty of agnostics roam the earth in a state that passes for happiness, and secular humanists seem to have gotten it right. Marriage was intended to be a sacred rite. The fact that it came to shoulder the burden of other, very necessary, civil responsibilities does not change this fact. The word itself should be relegated to a religious ceremony, and the definition of an appropriate marriage (or handfasting, for that matter) should be left entirely to the religious institution. To suggest otherwise is to dishonor the varied beliefs of the vast majority of this planet. The civil contract between a couple and the community should be the sole responsibility of the local municipal authorities. Priests and rabbis should not work for the State, at least not in this country. Let judges and mayor sign the licenses. Taking God out of the equation in this manner might make it a little easier to allow people to have normal family lives even if they don’t happen to believe that a heterosexual union is normal for them. Beef Brisket Is Not Just For Barbecue

By Jim Bolding Texas Style Barbecue Beef Brisket is well known in barbecuing circles. It’s almost always a required item in barbecue competitions. However, this great tasting cut is not just for barbecue. Now there’s certainly nothing wrong with barbecue brisket. I love it! The long slow cooking in a smoker creates a brisket that is really something special. My contention is that it’s just as special cooked in other ways. Selecting The Best Brisket The key to great tasting and tender brisket cooked by any method begins with selecting the brisket. You need to be a little picky and not just grab the first one you see. Brisket is a primal beef cut and is a long fibered muscle from the chest area of the beef critter. It’s located just below the first five ribs. The brisket muscle is used for walking and because it’s so heavily used it is naturally tough. However, some briskets are tougher than others. Selecting the tenderest brisket is a combination of skill and luck. Beef Brisket Cuts The first step in selecting brisket begins with which cut. Whole beef brisket is normally in the 8 to 12 pound range and has an inner fat layer between the muscles that will not render during cooking. They are usually sold in cry-o-vac packaging and are not trimmed of excess fat. Unless you have a lot of people to feed and are prepared to deal with all the fat steer clear of whole brisket. Whole brisket is further divided into point cut and flat cut brisket. These cuts are in the 4 to 6 pound range and have been trimmed of most excess fat. The point cut has much more interior fat than the flat cut. It’s a great cut for shredded beef but because of all the fat it doesn’t slice very well. For sliced brisket you would want to select the flat cut. Brisket Grades Beef is sometimes graded for eating quality. All beef is inspected for wholesomeness but quality grading is voluntary and the packinghouse has to pay for it. Of all the grades there are only three that are available at the retail level. The three grades are prime, choice and select. Unless you order online you will probably never see the prime grade. That leaves choice and select grades. Of the two the choice grade will have the best fat marbling and will result in a more tender brisket. If your brisket is not quality graded then you could be getting any of the three grades. It’s all a matter of luck. If you can get a good view of the non-graded brisket try to select the one with the best marbling. If you can’t get a good view then go with a smaller brisket. It’s likely that a small brisket is from a younger animal and will be tenderer. You can also perform a flexibility test. Place your hand vertically under the center of the brisket and let the brisket droop over the edges of your hand. The brisket that droops the most will be the tenderest. Cooking Brisket That’s it for selecting brisket. Now let’s cook it up. (And not on the barbecue!) Baked Beef Brisket Since brisket is one of the toughest cuts of beef that you can buy most cookbooks will tell you that it has to be cooked with a moist heat cooking method. However, by imitating the low and slow method of smoke cooking you can bake a brisket in the oven. And it’s great! The low temperature of the oven and the long cooking time will melt the connective tissue and fat making a tender brisket. It also allows the brisket to cook evenly all the way through without drying out the exterior. Brisket Slow Baked and Sauced 4 lb. flat cut brisket Garlic powder Celery salt Worcestershire sauce 3 Tbsp. liquid smoke Onion salt Black pepper For The Sauce: 1 cup catsup 1/3 cup Worcestershire sauce 2 cups water or broth 3 to 4 drops Tabasco Sprinkle the brisket with the liquid smoke, garlic powder, onion salt and celery salt. Cover with foil and refrigerate overnight. The next morning sprinkle the brisket with pepper and drizzle the Worcestershire sauce over it. Cover and bake at 275 degrees for five hours. After five hours uncover the brisket and pour the sauce over the meat. Return the brisket to the oven and bake for an additional hour. Baste with the sauce every 15 minutes. Remove the brisket from the oven and pour off the sauce. Allow it to cool for approximately 30 minutes and then slice very thin across the grain. Drizzle some sauce over the slices and serve. Braised Beef Brisket Braising is a moist heat cooking method by which meat is cooked in a small amount of liquid at low heat for a lengthy period of time. Braising is sometimes referred to as “pot roasting”. The long, slow cooking develops flavor and tenderizes brisket by gently breaking down its fibers. Braising can be done on top of the range or in the oven. A crock-pot is an ideal braising tool. A tight-fitting lid is very important to prevent the liquid from evaporating. Braising is my moist heat method of choice for beef brisket. Tex/Mex Oven Braised Brisket Recipe 4 pounds beef brisket, flat cut1 1/2 cups beef stock For The Tex/Mex Rub: 2 tablespoons chili powder 2 tablespoons salt 1 tablespoon garlic powder 1 tablespoon onion powder 1 tablespoon ground black pepper 1 tablespoon sugar 2 teaspoons dry mustard 1 bay leaf, crushed Preheat the oven to 350 degrees F. Trim any excess fat from the brisket. Combine all the rub ingredients and season the brisket all over with the rub. Place the brisket in a roasting pan and roast, uncovered in the oven for 1 hour. Add the beef stock to the pan. The liquid should be 1/2 the height of the brisket. Add some water if necessary. Lower the oven temperature to 300 degrees. Cover the pan tightly and continue cooking for another 3 hours or until its fork tender. By carefully selecting your brisket and using either one of these two recipes you will be rewarded with great beef flavor and surprising tenderness from this tough cut. By Warren Adams Christians have you ever wondered why America is in Iraq? Why is God allowing our men and women to be in harms way? Why are so many of them being killed? I do not have the answer. But I do know that God does. As I pondered these things the thought came to me that maybe this is Gods way of getting Christians into that country. Before the fall of Sadam Hussein the possibility of Christian missionaries getting into Iraq would have been impossible. Now there are thousands of Christian military personnel there. As you pray for their safety pray also that God will use them for His glory. I am sure they have restrictions on them about sharing their beliefs, but they can live a life that would show the love of God. The love He has for everyone, including the Muslim. The people of that country will be able to see the lies, about Americans and Christians, are not true. Paul told the Corinthians that some plant, some water, but God brings in the harvest. Pray that seed is being planted. Pray some seed is being watered and God would bring in a harvest in that country. Wouldnt it be amazing if an evangelical outbreak swept that country? There are some that will say that can not happen. There are those that do not want it to happen. There are those that say those people are lost and will always be lost. God has the answer. We do not know what he will do in that place with the Christians that are willing to be used by Him for His glory. We know nothing is impossible with God. Although it almost seems improbable, the possibility exists. So instead of despairing about the situation pray for Gods will to be done. Pray for the Christian soldiers that have the opportunity to show the love of God to the people of that nation. Pray for their well being both spiritually and physically. Pray that they would understand they are not only in the American Army but they are also in the Lords Army. May God bring all of them home safe and sound. But until that time let them be about His business as they do their duty each day. Pray that God would use them to bring about the salvation of that nation. Pray that the people would open their heart to the Lord Jesus Christ. Scripture tells us that one day every knee shall bow and every tongue shall confess that Jesus Christ is Lord. By Steve John Cowan In the beginning, there were websites. Websites designed to tell the world that the site owner actually existed, and probably little more. Going back less than twenty years, to a time when the internet as we know it was nothing more than a seemingly insane dream, websites were most often created with very little thought given as to what they were actually supposed to do. And, you know what? That is still how the vast majority of sites are created! Most websites suck - sorry to say that, but it is true, and I am willing to bet that, if you have your own site, that yours might be amongst this group of suckers! See if you recognize yourself in this picture. I know that I do! You set out to create your own site, so you work on it for days, maybe even weeks and finally comes the big day, and you publish the site. You are one happy bunny! But, a few days later you come back to it and take another look and you are not so happy. Still later you are less happy, and, very, very soon, you hate the darned sight of it! You know why this happens? Because your baby was ugly in the first place, but you just became blinded to that fact by parental love! You made the fatal error of falling in love with your product, and you lost sight of what that product was supposed to do. The truth is that most web sites are just not up to snuff, even those created by experienced and highly-paid web designers. They’re often hard to navigate or badly organized, over-designed, under-designed, incomplete, baffling or simply don’t give us what we want. Now, forgive me for pointing out the obvious here, but the consumer (me or you) should be comfortable and relaxed using a web site. It should be an easy and pleasant experience, just like eating a nice meal in your favorite restaurant. All web sites are created with love, but it is like a kind of puppy love that very quickly fades. All that is left behind is the grim reality of the site that you are stuck with! I believe, however, that your aim when creating a website should be to make it genuinely long term lovable. It should be a site that you can visit again in 6 months, 12 months, or three years, and know that it is still easy, rewarding and pleasurable to use. Now, think of any website you have recently visited, your own included. Was that a pleasant experience? Was it, for example, like enjoying a favorite meal in the restaurant where you always have your most enjoyable experiences? Specifically, picture yourself in your favorite seat in this restaurant. You choose your favorite dish from the menu. Now, how quickly does it arrive at your table? Is it cooked properly? Is the waiting staff friendly or surly? Are your knife and fork clean? Is the wine to your satisfaction? These are all questions that you will, probably entirely unconsciously, address whilst sitting in the restaurant. It is all part of the great ‘experience’ that make you eturn to that restaurant again and again. Now, transfer those questions to your site, and think about the total experience. Are all the small details in place that, added together, makes it a great site to visit? Is the site ‘cooked’ properly? Are your virtual knife and fork clean? If not, you need to ask yourself why?
